Pirozhki (пирожки)
Piroshki are a popular Eastern European and Russian street food. They're yeast-dough buns with a variety of fillings both sweet and savory. The most common savory fillings include ground meat with rice, mashed potatoes, cabbage, cottage cheese, sautéed mushrooms, vegetables and boiled eggs with scallions. Sweet fillings include fruit preservatives or reduced fruit and sugar (cherry, apple, various berries, apricot, etc,.) I've also made them with chocolate bars. They can be fried or baked; I've had both, but I prefer fried. They're individually-sized, about the size of your hand.
Ingredients for Dough:
1 and 1/3 cup of warm Water
1/3 cup of warm Milk
2 tsp Salt
2 tsp of Vegetable Oil
2 and 1/2 tsp of Active Dry Yeast
1 Tbsp of Sugar
3 and 1/2 cups of All Purpose Flour

Instructions:
1) Pour warm milk and water into a large bowl then add salt and oil and mix. Sprinkle yeast over the mixture then sprinkle the sugar over the yeast. Let the yeast activate and become foamy (5 minutes)
2) Add the sifted flour on top and mix until it's all incorporated evenly
3) Cover the dough with a towel and let it sit in a warm place for an hour and half to two hours

Assembling Piroshki:
1) Generously flour the surface (I use our granite countertop) pinch of small portion of dough and cover the rest so it doesn't dry out
2) Roll out the circles of dough but not too flat and fill in using your choice of filling; not too much so you can tightly seal the edges
3) Continue the process until you have all of them filled
4) Fill up the frying pan about half the size of piroshok with oil. Heat up the oil and place in 3 at a time so the temperature of the oil doesn't decrease. Fry on each side until golden brown (3 min)
Potato Filling:
3-4 Large Potatoes, diced
1/2 Onion, finely chopped
2 Tbsp of Butter
2-3 Tbsp of Sour Cream
Dill, finely chopped
Green Onion (Scallions), chopped
Shredded Cheese
Salt & Pepper to taste
Instructions:
1) Peal, dice and boil 3 large potatoes then set aside
2) Melt 2 Tbsp of butter and saute 1/2 of a diced onion
3) Cut up fresh dill and green onion
3) In a bowl combine potatoes, salt, pepper, onions, 2 Tbsp of sour cream, dill and green onion and shredded cheese of choice then mash it all together
Brazed Cabbage Filling:
1/2 Small head of Cabbage, shredded
1 Onion, diced
2 Carrots, grated
3 Garlic Cloves, finely chopped
3 Tbsp of Tomato Paste
1/4 cup of Water
Salt and Pepper
Vegetable Oil
